CEMARAN MIKROBA PADA JAJANAN SALOME DI KOTA KUPANG

Mikroba yang tinggi pada salome dari pedagang S1, S2,S3, S5,S6 dan S7 kemungkinan disebabkan oleh tingkat sanitasi yang belum maksimal dikarenakan pedagang salome tersebut. Hal inilah yang terjadi disebabkan kurangnya kebersihan pada perlengkapan dan peralatan yang dipergunakan, alat yangKandungan digunakan untuk mengambil salome masih kurang higienis, selain itu alat tersebut dipergunakan berulang kali dan disimpan pada ruang yang terbuka. Hal ini yang mengakibatkan masuknya mikroba pada salome tersebut karena ruang terbuka sehingga menyebabkan paparan langsung dengan udara dan debu sehingga mengakibatkan terjadinya kontaminasi mikroba di udara. Pengujian total jumlah cemaran mikroba bakso dilakukan dengan metode hitung Total Plate Count (TPC).
